Saveur Restaurant offers fine dining food in a casual urban setting. Award-winning chef, Robert Cassels, delivers French-inspired contemporary cuisine through playful and elegant tasting menus, using local ingredients wherever possible. I liken Robert's tasting menu to the dramatic rising to the crescendo in a beautiful composition.
A soft, easy start, followed by a series of upbeat tempos rising in drama and volume until it reaches the top, the peak, the crescendo, before it comes back down to a slower, more mellow finish.

Services
We are providing private dining on Friday and Saturday nights. Due to social distancing guidelines we can not accept tables over 6 guests and have limited space available for dine in. Please note that due to staffing shortages, we will be closed on Friday and Saturday between 2:00 PM and 5:00 PM for a short break.

Absolutely delicious and beautifully presented. It’s the sort of meals that brings you to wonder… how did they manage to turn mundane ingredients, you find in any fridge, into something so delicious!?
The setting is clean and nicely decorated, the seatings were well sectioned for covid as well. I think they did try their best to serve but they were a little bit understaffed.
Would love to try more dishes next time in Victoria!

Had birthday dinner here yesterday. The food was amazing! The crispy pork belly was so tasty with that a bit crunch outside and so juicy inside! The squash and Quinn sauce was so good with the meat too. The duck was surprisingly soft with also crispy skin. It really had the duck taste in it which I loved so much! Personally I loved the duck slightly better than the pork belly, but my friend liked the pork more.
Had the dark chocolate dessert at the end with chestnut, foie gras ice cream and chocolate nibs flakes. Nice combination too!

Service and food here was top notch. We shared a few plates and every plate and recommendation from our friendly server was exceptional. There was an 18% service charge automatically added to the bill, but I think it's well-deserved. Saveur Restaurant was the exclamation point to our weekend in Victoria.

I ordered grilled octopus which came with unbearably hot polenta, the waitress warned us about the hot plate but nothing about polenta which tell me she has not told by chef. Polenta comes in bite size you can guess the rest of story.
There was no balance from taste perspective.
Some elements were tasteless (foie gras) and some were too strong(demi mushroom).
The plating was beautiful and thats the reason for 2 stars.

I will start by saying the food was absolutely legendary and the kitchen did a wonderful job. I felt our server wasn't informative/knowledgeable about the dishes and was purely making suggestions off price. We had the peppered bourbon cocktail, I tasted zero amounts of pepper and infinite amount of sweetness. In my opinion it could be reworked with better garnish, it felt like someone pulled some rosemary pieces off a twig and threw it in a glass.

That was the that was the fourth time that i have eaten dinner at Sauveur. It has been exceptional every time. Yesterday it was close to perfection. The tasting menu and wine pairings worked so well together. The food and wine are presented so well. It's one of the best restaurants in Canada in my experience. Long may it continue.

We loved our dinner! Special in every way: incredible flavors and creativity, wonderful server ( we sat at the bar and our bartender/ server made the experience memorable- he was geeked out over what he was serving). Delicious , surprising... fantastic. We ordered off the menu and there was not an off note! Don't miss!!!

I've been 'burned' before on the hobgoblin of Victoria restaurants, a great first visit, then consistency flies out the window on subsequent trips. Think Agrius, Olo, Cafe Brio, Il Terazzo, Brasserie L'ecole, and several others.
So, 'only' a four star to begin, but if following visits are as spectacularly good as last night, it'll be upped to five stars.
The restaurant was full on a Wednesday night.

It's got a great look inside, with low lighting in the nice combination of industrial and modern type decour. Lots of exposed pipes, a nice bar and simple, elegant seating and tables.
They have a tasting menu for $65 per person that is five courses and looked quite good. None of us are hungry enough to do a tasting menu so we decided to do Allah cart. We were a bit surprised

You should make reservations here on your next stop to Victoria! The welcome scones were delightful; a cross between a biscuit and shortcake. The strawberry rhubarb was enough to put that taste complex with sweet, savory soft and crunchy.
I ordered the hangover hash. The freshness of the herbs just added to the total flavor!! So good!!

The tasting menu was innovative, but the taste itself was only slightly above average, and the same for the a la carte dish. Pork belly was nicely executed, but the ling cod was NOT fresh and overcooked. Our friend had the broccoli and politely commented that the dish was fine.
Overall, based on the final bill, we had a non-impressive 'fine dining' experience

We did the chef's tasting menu and the vegetarian tasting menu. Each of the 5 dishes on each of the 2 tasting menus was carefully crafted so that it had several distinctive unique and uncommon flavors that came together in a beautiful way. Doing this for one dish is impressive for 10 dishes it is simply incredible!
I highly recommend doing the wine pairing with the tasting menu. On some dishes the wine made the dish and on others the dish made the wine.
